What kind of beef am I buying?
Monrovia Farm feeds Black Angus and Black Angus Cross heifers and steers.

How is the beef sold?
Monrovia Farm beef may be purchased by the whole, half, split half (quarter), or eighth of an animal. All sales are by the hanging weight, which is the weight of the carcass prior to trimming and de-boning.

What is a split half?
A split half equals one quarter of beef. The split half is one side of a single animal, which includes cuts of meat from the front and rear quarter. These cuts are combined and then split as evenly as possible into a quarter to provide each customer with a diverse freezer selection.

What will a quarter weigh?
Monrovia Farm beef cattle typically sell at a live weight between 1,100 to 1,500 pounds. After slaughter, the hanging weight of the animal will be between 700 to 900 pounds, resulting in a hanging quarter weight between 175 to 225 pounds. After custom processing, a quarter will provide between 135 to 150 pounds of freezer beef.

What will I receive in a standard quarter?
You will receive half the cuts from the front and rear portion of a side, which will include:

  • 2 - 3 Porterhouse Steaks (1" thickness)
  • 2 - 3 T-Bone Steaks
  • 5 - 6 Ribeye Steaks
  • 3 Sirloin Steaks
  • 1 Flank Steak
  • 1 Bottom Round Roast
  • 4 Short Ribs
  • 1 Spare Rib
  • 1 Brisket
  • 3 - 4 packages of Stew Meat (1 lb each)
  • 25 - 30 packages of Hamburger (1 lb each)
  • 4 - 5 Blade Chuck Roasts
  • 2 Arm Chuck Roasts
  • 1 Eye Round Roast
  • 2 London Broil Roast
  • 1 Sirloin Tip Roast
  • 1 Top Round Roast
  • 2 packages of Liver
  • Heart & Bones available upon request

How much hamburger comes in a quarter?
Approximately 40% of your beef order will be ground hamburger.

What is cow-pooling?
Cow-pooling refers to a group of friends, neighbors, family members, or like minded individuals who join together to purchase a quarter, half, or whole animal. Cow-pooling is a cost effective way to get local, high-quality, non factory farm beef without paying exclusive grocery store prices. Think global and buy local.

Is Monrovia Farm beef fresh?
Yes, Monrovia Farm beef is fresh and sold no more than 3 weeks after butchering.

Where is Monrovia Farm beef processed?
Monrovia Farm beef is processed at Silver Ridge Farm, a local, custom, family owned slaughter house facility that is inspected and certified by the Virginia Department of Agriculture and Consumer Services. USDA inspected and certified beef sales are processed at T&E Meats of Harrisonburg, VA.

How is the beef packaged?
Monrovia Farm beef is packaged and flash frozen in portion sizes similar to the conventional packages found in your grocery store.

How long will the beef last?
Monrovia Farm beef is not processed with chemicals or shelf life stabilizers and will stay fresh and safe in your freezer for at least one year from the date of purchase.

Do I need a freezer?
Yes, we recommend a 7.0 cu ft chest freezer for a quarter of beef. A chest freezer is preferred to the freezer compartment of your refrigerator because it will keep your meat at a constant temperature and chest freezers do not auto-defrost, which can rob your freezer beef of moisture. The chest style freezer also eliminates the ‘Oh no, I left the door open’ problem, which can be disastrous. A 7.0 cu ft chest freezer will cost you approximately $180.00 and will hold up to 245 lbs of frozen goods.

When will my order be available for pickup?
Monrovia Farm beef cattle go to the abattoir the second Wednesday of every month during the harvest season. Your order will be available 15 to 18 days later.

How do I pay for my order?
After confirming your order, please remit a deposit of $200.00, via Paypal or check, made payable to Monrovia Farm, to reserve your beef. Balance is due in full prior to pick up.

How much does Monrovia Farm beef cost?
Monrovia Farm beef is sold per pound by the hanging weight, which includes all associated processing and custom butchering fees. Prices are subject to change due to market conditions; please call or email cathy@monroviafarm.com to confirm.

Can I visit the farm and see the cattle?
Monrovia Farm welcomes visitors and we would love to give you a tour and talk with you about our beef cattle. Since we are full time farmers, please email or call in advance to make an appointment.
